www.calvisiuscaviar.com) in the Four Seasons Hotel New York are surprised to learn that the fine white-sturgeon and osetra caviars they are tasting come from Italy, not Russia. The small, sleek lounge, which opened in March, serves nothing but caviar dishes, Champagne, Italian wine, and vodka. In addition to the lounge, Calvisius’ Italian caviars are now available in several specialty shops around the country and at such restaurants as New York’s three-Michelin-starred Le Bernardin.
