The Canyon Ranch Grill at the Palazzo Resort might just be the healthiest place in Las Vegas. The restaurant, helmed by the Canyon Ranch company’s veteran chef James Boyer, uses largely organic ingredients; lists the calorie, fat, and fiber counts for each dish on the menu; and even makes its own secret-recipe, no-guilt sodas. And yet the café—located at the entrance to the resort’s 134,000-square-foot SpaClub—does not sacrifice flavor in favor of health. Its creative breakfast and lunch dishes include a sweet-potato hash with ham and an organic poached egg (230 calories), as well as a roasted beef tenderloin sandwich with arugula and a horseradish sauce (330 calories), both of which play to Las Vegas’ guilty pleasures while helping patrons hold on to the benefits of their morning workouts. Though it does not serve dinner, the Canyon Ranch Grill has a social lounge that offers organic, biodynamic, and sustainable spirits, beers, and wines.
